Many professionals don't even run the user interface on their servers. We run ZFS on Sun's Solaris operating system and don't even have a window manager installed. No apps. No flashy colors, no user interface.
The reason is most of these servers are running:
A network file system like ZFS
Apache for serving up websites
mySQL or PostreSQL for the database
