Linux comes in many flavors, and Ubuntu is a flavor of Linux. You'll also hear about Debian (which Ubuntu derives from), Red Hat, Centos, Scientific Linux, etc., etc.

They are similar, but differ in weird idiosyncratic ways.

Most of my clients run Ubuntu (in particular, Ubuntu 12.04) on their servers; it's a very reasonable server OS as well as a desktop one.
